I tried cutting and shaving some wood with them, which is obviously harder on a blade than slicing vegetables or meat. Even after that abuse, they stayed impressively sharp. And when I say sharp, I mean really sharp. These aren't the kind of knives you can be careless with. They slice cleanly with very little effort and make food prep noticeably easier. So far my biggest takeaways are the balance, comfort, and edge retention. If they continue to hold an edge this well over time, they'll be an excellent value.
