I've been using this set for around a year now and I absolutely love it. I switched from "non-stick" pans before, which always looked scratched and flaky after use, and after reading about the health hazards of non-stick pans, I wanted to switch to stainless steel. These stainless steel pans glimmer and shine like they're fresh out of the box, even after a year of use. Now, other reviewers have complained about food sticking during cooking: 1) you have to heat the pan with oils before adding your food, and always start with a heat setting lower than usual because they heat up very quick. 2) If food starts to stick, just add a little water, stock, or sauce to the pan and stir in vigorously while cooking, working at the areas where food has stuck or seared to the pan, and the bits stuck to the bottom will come loose. I've not had any problems with food sticking while following these guidelines. Also, you can use any utensil, but I find that wooden utensils work easiest while cooking and don't scratch. Second, cleaning is important: the pans will lose a bit of shine if not cleaned properly. I clean mine with The Pink Stuff, which is a slightly abrasive cleaner and it really lifts any residue to make the pan look practically brand new, and because the interior of the pans are a brushed steel, the cleaner doesn't leave any marks. These go in the dishwasher just fine, but might come out looking a little dull, so I prefer handwashing to preserve thier shine. If I had any complaints, it would be 1) they are a little heavy, which can make them difficult to handle, and 2) I wish the lids had a little lip to help with draining. Other than that, these are stunning pans and I won't use anything different. I'm already considering buying a second set so I have more and can extend the life of the pans I use the most. Great skillet! Heats evenly, and produces a great sear. Having used it for several months now I can tell you it has held up well so I would say it is durable. As with all stainless steel it will stick, however that can be reduced by preheating the pain before use. It needs to be hot enough that if you put water in it would bead up immediately. And then use oil. I recommend one of those little oil sprayers, saves so much oil and keeps the calories down. As for cleaning, barkeepers friend is your friend and using it once a week will keep the pan as shiny as the day it arrived.
