Who knew stainless-steel pans could be “nonstick”? SO worth the price!
Since when did stainless steel become nonstick? I’m pretty sure it’s because this SS is high-quality and doesn’t have the “pores” (can you tell I’m not a physicist?) to let food stick—like my decades-old Le Creusets (as long as I don’t do something stupid and let a pot burn without sufficient liquid). So there came a time when I realized—a “duh” moment—that, while I was religious about never using “nonstick” pans that may have been scratched (or, in one case, dishwashered) over the years, ensuring that my one remaining small “nonstick” skillet was never scratched—I realized that I had several “nonstick” sheet pans that had been scrubbed to death and yet were far from being nonstick. Toxic. So I bought 2 sets of quality stainless-steel pans from Amazon. And guess what? They’re non-stick. With these new sheet pans, which have by now been used dozens of times to roast mostly vegetables BARE—no parchment, no Silpat, just a little oil—the pans have washed up perfectly and easily (yes, when in doubt I do tend to leave in the sink for an hour or 8 with a little Dawn). I have been ultra-careful and hand-washed only, which is easy because they’re just scrub and go. Not scrub, scrub, scrub, and cry. Scrub softly with the business end of a Soft-Brite and they’re perfect. I’m actually astonished, and embarrassed that I cooked for so long with what could be toxic sheet pans. And I love the “little” pans. These are so handy! And all of these pans are SO worth the price! I bought 2 slightly-different sets (6 sheet pans—hey, I cook a lot!) , so I may repeat this review on the other set.

The only sheet pans you'll ever need to buy
Nordic Ware is the gold standard in kitchenware and these pans are why. They will last forever. I've put mine through heavy use and they still perform like day one. The aluminum construction heats evenly so everything bakes and roasts consistently across the entire surface. No hot spots. Non-stick performance is great even without parchment though I still line them for easy cleanup. Food releases cleanly and nothing sticks to the surface when the pan is properly seasoned over time. The encapsulated steel rim means zero warping even at high oven temps. These stay perfectly flat every time. The appearance out of the box is a nice natural aluminum finish. One tip though: do not put these in the dishwasher even though they're technically dishwasher safe. It will make the color dull and discolored (look at mine one has been dishwashed, the other one has never, both been used equal amount of time). Hand wash and they'll keep that clean look for years. Minor staining will happen over time with use but that's normal for uncoated aluminum and doesn't affect performance at all. The 2pk half sheet plus 1/8 sheet combo is the perfect size setup. The half sheets handle everything from batch roasting vegetables to baking cookies. The 1/8 sheet is great for when you just want to heat up something small without pulling out a full size pan. Fits in the toaster oven too. Covers all my daily needs without cluttering the cabinet. Durable, functional, American made. Stop buying flimsy nonstick coated pans that peel after six months and just get these.

These are way more usual than first thought. They actually are purpose built for oven roasting vegetables and baking cookies. I have reheated food on 400F a lot and they showed no signs of warping. They heat and cool quickly and don't take much to clean. I didn't use parchment paper at first, but they still came clean pretty easily. HOWEVER, DO NOT WASH IN DISHWASHER. Everything you have heard about that is true.

There's a reason why you see similar sheet pans in every reputable restaurant or well stocked kitchen. These serve so many purposes and I really wouldn't want to live without the convenience of these. And as far as sheet pans go, these Nordic Wave ones are extremely high quality.
