Delicious and Easy Recipes!
I have had the book for a week and have already made three of the recipes from it! I made the Lemon Basil and Smashed White Bean Sandwiches, the Caprese Pasta Salad, and the Green Goddess Cucumber-Avocado Sandwiches. All were delicious and very easy to make! I can't wait to try more of the recipes. When I have bought vegetarian/vegan cookbooks in the past, the recipes have been impossible to make -- I could never find the ingredients I needed and they never felt like much of a meal. This cookbook is the exact opposite. I highly recommend it.

Easy recipes with common ingredients
I like that the recipes have ingredients I mostly already use. Easy to follow instructions and good for any level of cooking experience. I am not a college student or completely vegetarian by the way. I just like simple recipes.

A different Road
I've considered becoming vegetarian and have taken small steps to get there. The receipts are simple and college friendly which is nice. I love the section over soups and kind of wish there was more.
